Lentil Loaf Recipe!Dec 12, 2020
It’s that cozy time of year that has me craving comfort food! I’m loving mashed potatoes and soup and my new favorite comfort food, Lentil Loaf! This recipe is vegan, whole food plant based, oil free and most importantly, DELICIOUS! Feel free to customize the spices as you like and change up the veggies as well!

For this recipe I used:
1 cup dry lentils (divided in 2 after cooking)
1 cup oatmeal (divided in 2)
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
8oz package mushrooms-chopped
Veggie broth or water for sauteeing veggies
2 tablespoons tomato paste
1 tablespoon Italian seasoning
½ tablespoon poultry seasoning
Salt and pepper to taste
2 tablespoons soy sauce or tamari
1 tablespoon vegan worchestire (or sub extra soy)
Glaze: Just ketchup or make your own homemade or (my favorite!) combine equal parts ketchup, bbq sauce and sriracha for a sweet and spicy glaze!
Cook 1 cup dry lentils according to package. Divide lentils in 2 after cooking.
Sautee veggies in veggie broth until tender.
In a food processor, combine cooked veggies w ½ cooked lentils, ½ cup oats and all seasoning. Gently process until combined but not mushy.
Combine mix from food processor with remaining lentils and oats.
Press into loaf pan.
Add ½ glaze to top of loaf.
Cook 30 minutes at 375.
Add remainder of glaze, cook an additional 5-15 minutes.
Let cool 15 minutes before slicing.
